Pumpkin & Italian Sausage Soup Here’s a smooth, hearty pumpkin soup recipe to try on a chilly fall evening. The sweetness of the pumpkin complements the spiciness of the sweet Italian sausage. If you like spicier foods, try it with hot Italian sausage. Ingredients 2 teaspoons olive oil 1 pound sweet Italian sausage 1 medium white onion, chopped 2 cloves garlic, minced 1/2 teaspoon salt 1/4 teaspoon black pepper 3 tablespoons unsalted butter 3 tablespoons all-purpose flour 2 cups milk 2 cups chicken broth 1 15-ounce can of pumpkin Shaved Parmesan cheese Chopped parsley (optional) In a large saucepan heat oil over medium heat. Add sausage; cook until browned. Add onion, garlic, salt and pepper. Reduce heat to medium. Cook 5 minutes or until onion is tender, stirring occasionally.
